Ingredients:
3/4 - 1 cup corn (fresh or frozen)
1 red pepper
1/2 small sweet onion (diced)
1 clove garlic (minced)
1 T olive oil
1 T butter
1 can evaporated milk (or whole milk)
5 small Yukon gold potatoes (diced)
additional milk 1-2 cups (skim or whatever)
spices:
salt, pepper, 1/2 teaspoon (or more) cumin, red pepper flakes, cayenne pepper
(spices/seasonings can be adjusted to personal preferences)
cilantro
Toast corn (frozen works, fresh is better) and diced red pepper in a skillet. Saute onion & garlic in a little olive oil & butter. Then add corn and peppers, evaporated milk (or preferred milk), potatoes, salt & pepper to taste, cumin, a few red pepper flakes, a pinch of cayenne pepper, and additional milk to desired consistency. Simmer until potatoes are tender. Serve with fresh cilantro.
